Ingredients

  • 2 cups Brown Rice Flour

  • 2 tsp Baking Powder

  • 1/2 tsp Baking Soda

  • 1 tsp Cinnamon

  • 3 Eggs

  • 1/4 cup Honey

  • 1/4 cup Safflower Oil

  • 1 tsp Vitamin E Oil (optional as a preservative)

  • 6oz Banana (blended)

Instructions

  • Preheat oven to 350F degrees

  • Spray baking pan or silicone mold with baking spray. I like to use Coconut Oil Cooking Spray because it’s lower in fat than other popular cooking sprays.

  • Mix the brown rice flour, baking powder, baking soda, and cinnamon together in a mixing bowl.

  • Add in the eggs, honey, oils, and banana one at a time while constantly stirring.

  • Once well blended with no lumps, spoon into your favorite baking pan or silicone mold.

  • Bake at 350F degrees for 25 min or until golden brown and edges release from the baking pan.

  • Refrigerate left-over treats for no more than 1 week.
